Hi there! I think if you are going to bite the bullet and replace countertops - which look to be granite or some other high end material? - I would also stain the cabinets. Otherwise, you won't see enough of a "refresh" and a change to feel it was worth your while.
I couldn't get a good sense of the color in your tiles, and obviously you will need to take them into consideration when choosing colors and materials, but....maybe stain the cabinets in a gray wash? Then, go with a lighter countertop such as Cambria's Torquay? And "marry" the colors of the cabinets, countertop and flooring in your backsplash colors.
So, it could end up something like this:

I always point out that clients should have a "story board" for their projects. The story board becomes the END result. It gives you something to move towards. If you replace the counter tops without a final destination, you will limit yourself as to what you can do later.

Take a few weeks (yes...I said weeks) to pick out some inspiration photos (as shown by karemore55) so that you have a clear idea of where you are headed. These photos then get mounted onto your board. You then drive around picking up samples of things that "work" and they too get added to the story board.

Once you have all 6 options decided upon (counter tops, backsplash, cabinetry, flooring, lighting, paint) you can start at the beginning to find your "project #1" = counter top. Pick out the slab and go for it.

If you want dark cabinets (dark stain) then you will want to work with light/white counter tops. If you want white cabinets (or a version thereof) then a dark stone works very well. You will also need to work out what your flooring is going to be (often inspired by the counter tops). You will want a clear understanding of a backsplash (derived from the counter tops and cabs together) as well as lighting and paint.

Doing renovations a bit at a time is fine...so long as you have a clear view of what you want in 7 years. If you choose a counter top that works with the dated oak...you may not get the cabinets that you really dreamed of. Then your flooring choice is limited once more.

After 7 years...you may have to redo something you did years before...because the colours and choices just don't work. This happens more often than you can dream of.

I would look through inspiration photos, print them off, and start gathering samples of colours that "work" towards your dream kitchen. Your stone and flooring samples get added to the story board as well as square footage and measurements for each item. The story board gets put into the trunk of the car (some people have it in a basket with all their odds and sods) and everytime you see a "sale" you can decide if it works or not. If it doesn't work, then leave it in the store.
