Moldy Sunflower Seeds

I was letting my sunflower dry out so that I could harvest its seeds. I started to do that today but It looked like some of the seed pods were getting moldy on the inside. They had black spots and a little bit of fuzz. Not much, but some. Also, some of the seed pods were empty, although most of them had seeds. I am just wondering why the seeds got moldy, and why some seed pods were empty. Should I just get rid of all of them to avoid the risk of eating mold? I have never harvested sunflower seeds before so I don't know what went wrong. I would like to know so that I can avoid that mistake next year. Any help would be appreciated. Thanks!
