Help! What's eating my garden?

Hi, I'm new to GardenWeb and am in desperate need of help!

We have beautiful raised beds that we inherited with our house in Davis, CA. Herbs, bush beans, jalepenos, red lettuce, adult bok choy and a (huge) pumpkin plant are thriving. About 3 weeks ago, something moved in and systematically ate all the brussel sprout seedings, broccoli seedings, carrots, bok choy seedlings and now leeks. They are eating just the leaves, leaving the stalks. We've sprayed all the plants with hot pepper spray, and have set rat traps near the seedings without any luck. I've checked the garden at night and see no evidence of slugs. They seem to come mostly at night but I've lost leaves during the day. Building hardware cloth/mesh covers isn't really an option given the size of our beds.
