Are you looking for ceramic, nonstick (Teflon or ceramic), cast iron or stainless steel? What size?

Emile Henry makes some nice ceramic pieces. They are not nonstick, but the gloss finish cleans up easily. They are rated to go from the freezer to a hot oven. Staub and Le Creuset both make enameled cast iron roasters as well. They weight a ton.

On the large, turkey sized metallic front, Mauviel makes some great roasting pans. I have the stainless steel clad version. They also make a copper version. I got mine via Sierra Trading Post at a great coupon deal. I personally recommend these shinier or lighter surfaces, as the dark surfaces like Teflon tend to burn your juices and veg.
