When in doubt - throw it out. If you ask the question your mind has already gone to high risk factor. Point her to the NCHFP and tell her why she is not preserving, but that she's gambling.

How old is the tomato sauce and was it refrigerated?

Your friend is putting people's lives at risk and as hard as it is, you should tell her that you disposed of the food and she really needs to know what she's doing!

In addition to what's been said, perhaps you could invite your friend over for a canning session and in return for her help send her home with a Ball Blue Book (as well as some jars of food).

Some tomato sauce recipe do not require pressure canning but cheese, like all other dairy products, isn't allowed in canning so yes, toss it too.

Brittany, please toss all. And I know it can be awkward, but your friend in her generosity is gambling with peoples lives/health. You'd do her a favor by telling her of her procedure errors before she learns the hard way.
