For any plant where my primary objective is to grow the size of the bulb, I always remove the flower stalk. Take them out sooner rather than later!

I'm thinking I'll leave the flower stalk if it means that I may get viable seed from them. These sets were very tiny and if I could possibly get viable seed and so then much bigger potato onions from them, well that's good. Of course from reading the Kelly notes I realize that may not happen but I'm game to try.

Well one of the scape flower heads on the red ones opened up and guess what - BULBILS! I got ripped off. These are not potato onions. They are walking onions obviously :( My bad for buying on eBay.

One thing the walking onions are good for is early scallions. So it might not be a total loss for you. Walking onions do go dormant into nests of bulbs, and some folks do cook with those bulbs. Opinions vary widely about how good they are for that, and apparently the various types of walking onions vary, too.
