you only see lines when you choose a contrasting grout, which is a popular style now. no need to do that tho. if you stick with a smooth tile (as you've pictured) rather than crackled or beveled, and a matching grout, i'm pretty sure you'll be satisfied.

Subway tile works for just about any space. As already mentioned, as long as you choose a grout that blends into the tile and doesn't contrast, it won't be busy. The only time you need unsanded grout is if you're doing a grout joint that is less than 1/8" or if you have a delicate glass mosaic.

It looks like the area where your stove is going, is a focal point. So I think a frame would be a nice design element to add, setting the tile inside the frame in a different pattern then what is running throughout the rest of the space...herringbone or straight set if everywhere else will be a brick pattern.

White or creamy white is timeless.
