Why not get the butcher block from Ikea and undermount the sink you might even find you love it.Make sure you get the one that is solid beech

I like the butcher block idea.
Also, if you already have older laminate countertops, they can be painted. I paint mine about every 6 months - trying to figure out which color/design i like before we spend the money to get the real version. Mine have been very durable/forgiving in spite of the abuse we throw at them daily.
Also, i worked on a project where we used plywood as a temporary solution. The family needed an occupancy permit (which requires countertops, here), but their granite choice was not available for some reason.
Cabinetry grade plywood can be oiled or lacquered like any wood and is easy to "size", especially for short term needs.

thanks. I would jump on the butcher block idea for a permanent solution if we didn't already have wood floors (difficult to coordinate), and its a little pricy for a temporary solution.
I'm interested in the plywood solution... how would you stain/seal them to make them more water resistant and wipeable?
