Do they really need to be backless?? I think the reason you can't find them is because they'd have to be very high.....and without a back, that might look strange. How about a low back swivel barstool. I'll see if I can find some to show you.

This is the one place in the home where function rules over style...So comfort ...swivel....quality of construction...lightweight for easy moving..all need to be satisfied first..also separate cushions add the opportunity to upgrade cushioning if needed and change the cushions from time to time ...good stools are expensive but a wise investment so probably more traditional or timeless styles are a good choice..I would recommend backs on your seating as it is a nice place to sit back ..relax...with a glass of wine when someone else is cooking and this is always my favorite place to max out on my I-pad or even pay bills...leaning back is good..

Here are some images from one of our designs. We think these chairs might inspire you.
