I have these same windows in my home and put semi sheer rod pocket curtains all the way across that way I can tie back the 2 on the sides where the windows open.

Another idea would be grommet panels on each side using a double rod with sheer panels behind...still letting light through but also adding some privacy.

Good call! I think curtains can help make a space more inviting.

You might consider Hunter Douglas Pirouette or Silhouette Shadings over the full window. You can add drapery panels on the sides for more dimension and softness, or the cleaner lines of the shading alone, depending on your design preference.

I recommend one large shade covering all the window sections (unless you anticipate wanting to have some sections of the window shaded and other sections uncovered.) One large shade would provide the greatest visual continuity and you would only need to operate one shade.

my only problem with putting one large shade is that if i want to open it all the way up It would be the whole shade that is my only concern. If I put sectionals, I can only open one side of the window....

We love your idea of using sheer shades! But we do think it would be better for each window to have its own shade. That will allow you to open and close just the ones you want, and it will make sure the shades aren't too heavy. It could look similar to these photos:
