Kitchen Remodel with 12' ceilings

We are remodeling our kitchen that has 12' ceilings (the before shot above). We are considering a vent over the new cooktop (where current stove/micro is now) but are unsure if we run the vent to the ceiling. Will it look like a smokestack? Also concerned about the space between the cabinets and the ceiling - do we add more cabinetry?
