Need help figuring out kitchen backsplash, tile or metal?

Installing a kitchen backsplash has been on my to-do list for the past six years. Motivation has finally hit, and I'm ready to take advantage of it! My dilemma is as such:

1. We have a fairly busy granite countertop, and I just can't decide what would actually go with it. I like smaller tiles, but am afraid it might be "too busy". I also like subway tiles, but think that they might be too modern to go with the feel of our Spanish style home.

2. I LOVE Spanish tiles, and would defiantly consider doing that with a mosaic over the stove, but don't think it goes with the granite countertops.

3. I am very intrigued by hammered metal tiles, but am wondering how functional they are. Will they rust? Are they easy to clean? Will mold grow behind them?

I cook a lot, and function is just as important as fashion in whatever choice I make. I'm including some pics of the kitchen here, along with some living room pics, because our house has an open layout and it is kind of one large combined area. I'm also including a pic of some metal tiles I saw at a store (not for sale, just used in the building) that I thought could look good in our kitchen.
