Of the two, the flooring and counter top, the counter top will be the hero. I would ask your installer to provide you with some sample stains including just having it oiled. Chose how you want the top finished first and then chose a complimenting stain for the flooring. The top could be darker or lighter and if you want it to stand out then several shades difference would be best. It all looks great so far, good luck! Reclaimed wood IMO is not suitable for any place where food is . These pieces of wood are found all over you have no idea what they have been exposed to many are from farms where horrible chemicals were used and the wood is probably impregnated with them. An actual hichory butcher block would be lovely but leave it natural .
