How much has it grown in the last year?

Usually people set up some wires to tie the limbs to when training to espalier. You can try an informal fan just cut the branches you don't want as they grow and leave the others that are parallel to the back wall/fence. This is where wires would help you might have some branches that aren't quite right but if you tie them to the wire they will be where you want and harden there.

Can you put the tree in the ground? Looks like some kind of slab under the pot just cut a piece out. I personally hate managing potted plants, lot easier when in ground.

Don't expect much from that tree as long as it stays in a pot. It will get root bound and not be able to take up any nutrients. Also, loose the stake, it serves no purpose.
