Weird leafy plants have taken over flower beds?!

Okay so, I have three flower beds that the previous tendent put some weird plant in. I'm not sure what it is but, it's a bunch of leafy things that have bulbs? I think. Regardless, their root system has COMPLETELY taken over the flower beds and they are pretty much impossible to just pull out or even dig out. Before I even got to the dirt, I had to pull out two trash bags worth of dead leaves. What are these things and how do I get rid of them?
