If you want to use an "organic" product, you are rather limited. Household vinegar (5%) applied in full sun can work but sometimes takes multiple applications. Other so-called organic herbicides tend to have rather limited effectiveness, IME.

Compare your weeds with shotweed, Cardamine hirsuta. This is an annual weed that grows and blooms very early in the season. But it is very important to keep those flowers from developing into seed heads as once the seeds form, they are released rather explosively (hence the name "shotweed") and can travel a significant distance. The good news is that this an easily removed weed by manual means, as it has a shallow and very concentrated root system. That would be my first choice :-)

Could be chickweed, Stellaria media. If so just hoe them off.

Use a scuffle how on them BEFORE they can flower and set seed.

Or, water them well and cover the area with clear plastic for a week or so and cook them.

Those "weeds" grew in your garden and removed nutrients from the soil, so if you till them back into the soil those nutrient will be put back into the soil. Any seeds that these plants would have contributed are already in the soil. Think of these plants as a cover or green manure crop.

Most everything I have read about solarizing soils says it will take about 6 weeks.

The weeds sound like winter annuals. Some may come up later, but most come on early. Hoe them now so that they can die off.

Here in western Oregon, bittercress can germinate, flower and set seed year-round. Even so, they are most vigorous during late fall, winter, and early spring.

If nothing is planted yet, use a weed torch. Might have to do it more than once but very effective at killing any seeds that may be present.

Your area is sizable, so it's going to be a bit of work and perhaps take some planning and material. I prefer to smother weeds with cardboard or paper and then cover with mulch. It all breaks down fairly quickly and feeds the soil microbes. Bare ground is an invitation to weeds, so you'll want to act quickly.
