New ceiling fan help

In my new house, connections were wired for ceiling fans in three rooms: the master bedroom, the great room, and a guest room. The last two rooms have cathedral ceilings. At my request, I had each ceiling box wired with two circuits, with an on-off switch and a dimmer switch on the wall. I just recently got a nice fan from Lowes and discovered that I cannot control the light and the fan motor separately (it comes with a remote control). I tried to run a wire from the box through the fan to the light, so I could use the dimmer, but never got that to work, so I blocked the dimmer circuit off and use the remote. It works, but seems to be a little klugey. I would like to avoid the problem for the others, but need to know in advance what brands/models I should look for. The great room fan will be quite large (80"-96"). I'm leaning toward the Minka Aire Xtreme or Minka Aire Slipstream XXL. Any suggestions?
