Cherry rootstock

This is just my 2ND year grafting but first year of trying cherries. My Cherry rootstock has two or three branches coming off the main trunk, and I'm wondering do I just graft on to the main branch of the 3 and leave the other ones until my Scion takes off. I wondered if I could just cut off the top branches and go down to the main stem but I don't know if I need those other branches to help give the rootstock life till the Scion starts to Bud. If these other branches can be cut off why don't they come from the nursery already pruned. I've only worked with apple rootstock before and it is just a bare stem when I get it. Any help with this would be greatly appreciated.
