A coop will be loads of trouble to change anything. You don't actually own the rights to change any infrastructure. You have to get permission to do anything involving anything. Lots and lots of patience to do this, and the licensed trades will need to deal with the coop board as well as the city permitting office. All in all, it's NOT going to be a budget redo, but you will get a budget result. Too much money will be spent on red tape.

Congrats on your soon to be new place! How much are you looking to spend, roughly? If you're not looking to spend much I would start with paint, a new shower curtain and a new mirror above the vanity. I would stay away from pink anything because you want to down play those colors.

I knew what I was getting into with the Coop and the bathroom look. Now I here to change the bathroom. I wouldn't mind dropping 5K. But don't think that is enough. The tiles would be first to go and probably the priciest (with labor). A half glass door instead of a shower curtain added to the number would be my number 2 want.

Cool grey won't work with the warm beige tile or the granite. Plus that trendy grey will be dated soon.
Cheaper and easier to stay with warm browns like the vanity. Start with changing the curtains to a solid, stripe or plaid instead of the lace and florals. Replace light fixture with a sleeker piece in brushed nickel to match other fixtures or replace all of them with bronze for a darker look. I would take the mossy green from the granite if I was looking to change the wall colors. Replacing the accent tiles would be a pain but is a doable DIY. Keep it neutral so that you can easily change color schemes with linens.

So as it was mentioned by another commenter it will be extreamly difficult to move or relocate plumbing fixtures...
And the the red tape is a headache...
But... You got a lot of things you can improve without all this problems!

1)you can raise the shower head and change the shower plumbing with no problem!
2)get a fixed glass placed on the shower side to make it into a modern "step-in" like shower.
3) the vanity unit replace with one to be 18" deep this will give you more space
4)replace the toilet with a skirted finish looks cool and easy to clean

Regarding the tiles I would advise to go with ceramic gray colored cement like placed on the floor in a staggered layout running perpendicular to the shower tub
And same one placed in a horizontal layout on the walls of the tub all the way to the ceiling with a vertical trim line maybe of center on the wall on dead center where the shower plumbing is
