As for veggies and herbs, many start and grow well from seed. I guess it depends on how soon you want to harvest produce from plants.

Here's my logic/thinking....

I start tomatoes from seed. But also plant a couple of seedlings and a med size plant in order to get produce ASAP. I also sow seeds bout every 3-4 weeks in order to have a succession of veggies. I sow seeds up till bout July 4th. Then have produce all summer long.

Beans: I start them from seed. Be sure to follow pkg directions on spacing. Beans need a decent amount of room in between plantings to avoid mildew. After bean sprouts come up, thin out seedlings to give em room to breathe.

Cucumbers: I start from seed. Cucs resent disturbance of roots and vines. That said after sprouts come up, I thin out seedlings and leave them plenty of room to grow. Depending on size of raised beds a plant or two would be sufficient.

Herbs: same advice as tomatoes. Depending on the time you're wanting to harvest/use fresh herbs. Many start easily from seed.
