I would strongly urge you to plan a trip to somewhere where you can see and select your backsplash tile in person. With such a beautiful granite, don't short change yourself on the backsplash. Kitchen remodels are too expensive to rip out and redo. I live in Houston where Daltile has a showroom staffed with ASID designers whose sole purpose is to help consumers select tile for their projects. I've used them for my kitchen, laundry and two bath remodels and have been so pleased with the excellent help they provided. Everyone who has seen the finished results have commented on how beautiful the tile looks. Also, they are very accommodating with your budget. Wherever you go to look at tile, bring samples of your granite, cabinet finish, flooring, wall color, etc. which will help the designers guide you in making a selection. They will give you samples of the tile to take home and view in your own house and lighting. My choice for your backsplash would be a mid tone color from your granite, matte finish and similar color grout. Sort of a monotone look for the backsplash to let the granite be the star. But you want contrast with your upper cabinets, so don't pick white. You have not shared your choice for flooring, but that would also influence the ultimate choice.
