I dislike stainless steel because it is so often used in cheap builder-grade kitchens.

I've had enameled sinks for years. No problem. The one in the kitchen now is 15 years old and going strong. Looks fine. There are a few stock sizes that are always made, so if you go with them you can always swap in a new one, if needed. If you get a fancy shape, you may be up a creek down the road if it needs replacing.

I prefer a deep, single basin with the drain in the back corner (frees up space in the cabinet below when the disposer is in the back corner).

I love my Blanco Silgranit sink. There are several colors and it's tough as nails.

A white apron front sink is very beautiful and timeless though pricey. A stainless steel sink is less expensive and quieter when washing dishes. Franke and Kohler are both good brands. I bought a very large single basin stainless by Kraus and its great except I don't like the finish. It's not holding up well compared to my Kohler prep sink. (Please make sure your floor tile won't be too slippery for the kitchen. :)

i have a blanco stainless sink in a similarly colored kitchen, if you go with stainless make sure to order the bottom metal grid, it keeps dirty dishes from sitting on the bottom of the sink, also you can pour something down the drain with a colander of fruit sitting on the grid.

+1 for Blanco Silgranite. Excellent product! Comes in multitude of configurations to fit your lifestyle/cooking habits. Pretty much nothing destroys it. 100% of my clients love these!
