Switch refrig and stove. Maybe a smaller sink for more room between stove and sink. Possibly squeeze in a small base left of the stove.

Or, place refrig where stove is. Move DW left of sink. Remove peninsula in order to place stove right of sink. You might have enough room for a 12" deep peninsula between doors and stove. It can be 42" high for protection. It might even be angled or the counter top can overhang at the end for seating.

I understand the stove is near or against a wall in either layout. Kitchen design is a compromise.

Putting the cooktop in the peninsula is a great idea, but I actually think the refrigerator tucked in the corner is fine where it is, although it would be better with a new shallower refrigerator. The wall where the stove is now could be a full-height built-in pantry, possibly with a small counter adjacent by the door. Your cabinet doors look blotchy, so if budget permits you could either refinish or replace doors and drawer fronts with new.

By placing the cooktop on the peninsula sacrifies safety and the shared experience of hanging out in the kitchen. Cooking, in my opinion, should be away from the main flow of activity. Maybe there will never be children in the kitchen and you are a master chef who likes to perform for your guests, then an island cooktop satisfies your personality. If you use a hood it may look great as the focal point in a photo, but will divide the room.
