There is nothing wrong with using them.

Dehydrate them.

They're prefectly fine for using however you wish...fresh (if you use them quickly enough since they won't store for long), frozen or dried....or all of the above.

Thanks, y'all. I've whacked the greens off and composted that part and have a whole crisper drawer full of the bulbs to clean, chop, portion out and freeze. I rarely use fresh onions so I don't mind that they won't cure/keep like normal. I was just worried they would be too hot to use or moldy/mealy from sitting out in the garden an extra year!
