White! Definitely. The silver would definitely attract attention. Without any picture, what the blue tile and silver edge conjures up in my mind is a 50s diner vibe.

To those suggesting to not edge at all... Can you help me understand? My husband and our contractor are telling me that we need a schulter to finish the edge because there will be cuts on the glass subway tile and edges will not be smooth.

See picture mock-up of our kitchen design. The edging will be from the peninsula countertop to the ceiling (it will go to the beam, NOT past it as shown in pic currently), separating the kitchen from the eat-in breakfast area. We do not have cabinets to mark a natural break, either for what it's worth.
