Using wood flooring in a kitchen--feedback needed

Transitional kitchen style: I've always had tile and am afraid I'll spill water or the dishwasher will leak and ruin a wood floor. However I would like the softer feel of wood. Is there a good-looking engineered wood flooring brand or type that is tougher and easier to replace in spots than a regular laid wood floor? If I use wood planking: I'm sensitive to polyurethane fumes. Will a waterborne floor finish be tough enough? Thanks.
