You can fry eggplant slices in the same way.

Just about any veggie I like to eat is even better when coated in cornmeal and fried. Yum, yum, yum. Good old southern cooking.

I have eaten eggplant fried with cornmeal batter before also. Something that might surprise people is turnip sliced into thin wheels, you have to make a egg & milk wash to dip them in so the cornmeal will stick to the turnip slices but it will surprise you at how good they are. I guess everyone has heard of frying green tomato slices rolled in cornmeal, which I like also. Another thing that few people have never tried is mushroom peace's dipped in egg & milk rolled in cornmeal and fried. It was hard for me to believe that I was eating mushroom the first time I tasted them. But anything fried in cornmeal batter is like cinnamon & honey it just goes good with anything.

Yes, my late wife introduced me to squash cooked that way. I eat them like little cookies. They are THE BEST!

We will have plenty of corn. We will be planting some this week and some more the following week.

I will be busy for a while shucking all that corn. However, I do it in the garden so it can be pleasant.

I have a corn crib design in my head that should hold about a ton of corn. It involves hardware cloth, 2 x 4s and one piece of plywood.

Johnny, You have shade in the garden? That's cool. I have some now, thanks to a pecan tree that is a lot bigger than it used to be, and which is shading more of the garden than I like, but I keep a lawn chair in that shady spot and it is nice to sit down there and cool off occasionally.

Autheray, It is about time, isn't it! I feel like I've been waiting forever, and really, the corn certainly isn't late. I usually plant an early variety, like Early Sunglow, for early (though smallish) ears of corn by Memorial Day and another variety or two that are later for a more prolonged harvest. This year I only planted Texas Honey June, which is a lot later than Early SunGlow, so I feel like we have been waiting forever, even though we haven't. It is just that we weren't harvesting Early SunGlow during the last week of May like we usually are, so now it feels like the corn is late.

All this rain has made the plants grow like crazy.
