I think either of those would work.

Love the black and white look you have going on. I'd look at white glass tile for some optical depth.

You could go Chip and JoJo style (HGTV Fixer Upper) and go with white subway tile with a dark gray grout. That's a great look!!

Personally I do not like the recessed shape and it is ultra modern looking fro my taste. Regular subway tile in a running bond pattern is classic & timeless.

Love the texture in those tiles! While I suggest something that has a little bit of color. It's better than having just a plain white tile. If you go with this option suggest laying them offset (or subway style) like the left side of the photo instead of straight stacked like the right side of the photo. Straight stacked makes it look too modern and strict.

If I do... Subway pattern for sure I was thinking a light gray grout. But I'm still leaning towards a white brick veneer for that vintage with a hint of modern.??

My countertop is honed and I have under cabinet lighting would you do gloss or a mat tile?

I'm not good with picking color I'm color blind so it can be difficult. Any suggestions I will look into it! Thanks

Excellent cabinet and countertop combination choice. Love the contrast! For the backsplash, we would go with White Oak Blend Interlocking Honed Mosaic or Arabescato Carrara.

Either would look good, but I think the matte would look better with the honed countertops. If you can.. I would ask the vendor if you could take a sample of each home to see how it looks in your kitchen.

I attached photos of what glossy subway tiles look like up next to honed countertop surfaces. The first photo shows glossy subway up next to honed countertops with no other shiny materials in site, and the second photo shows glossy subway with honed countertops again BUT the center island is polished, so it balances out the shiny subway. In your kitchen, matte would probably work best.

This glass tile is called 'Dimensions Linen' and already comes in a herringbone mosaic. It would brighten up the room and be beautiful in the space! On the right is a close up of the tile:

Another great option would be our Piccadilly line! It is a subway style tile but a little more modern being a 4x12 instead of the traditional 3x6. This picture depicts 3 different colors of the line 'Perla', 'Deco' and 'Bianco'. They are high gloss but textured and would bring a new and interesting element into the kitchen. Using the grey and white would make a great transition from dark counters to white cabinets. This is along the same style as ryanek00 suggested:
