Need help with kitchen range hood for Bluestar 48" range

I am purchasing a stainless steel BS 48 inch range. I had planned to do a white wood hood with insert, but am worried about the paint yellowing over time from the high heat. I have now decided on a stainless hood. I only have 8 foot ceilings, so is it better to go with a simple pro stainless hood with panels above (no room for cabinets) or go with the one I have linked below or something similar. It will be flanked on both sides with white cabinets. I want a classic style white kitchen. Also, my kitchen is not huge. I would say it is medium size.

The inspiration kitchen is fabulous but I feel the ceiling is 10' high vs. your 8'. Before you buy the oven make sure you can purchase an appropriate vented hood to give you the feeling you want. Have you considered a smaller oven or do you need the 48" model? What are your room dimensions- being specific makes it easier to get good advice. Medium is too vague.
Great to plan it all first before you spend your money!

Thank you for your comments. My kitchen is 11.5 x 23 (including table space). I need the double ovens and have no room for a wall oven or single oven placed elsewhere. I have the design in place, but was told that the high output ranges may yellow the white painted hood above. Do you agree? I am a serious cook will be using the griddle and wok rings periodically. My preference is the white hood though. Am I making a mistake?

As a serious cook you know function over fashion is most important. You need your hood to work well for you and yes it will become greasy and dingy, more so if you do not use an appropriate material. Forget wood you need it to be metal and sized right for your range.
