I think shellac brings out a lot of beauty, depth and chatoyance of woods. I'd skip the stain. But shellac is not always considered the most durable, so if you use dewaxed shellac, you can coat with nearly any other clear film-forming finish.

Boiled linseed oil also brings out a lot of latent colors and you can use that as a first coat.

But the real answer is to run trials on a scrap or the underside to see what you like best.

I vote for a penetrating oil, then french polish, probably with platinum shellac, definitely mix your shellac fresh from flakes.

If you use linseed oil for the french polishing oil/lube, you gain a good degree of durability to moisture, etc. in the finish.

If you want a bare-naked wood look, wet-sand with watco oil, this gives the silky-smooth unfinished look (no surface film) but has zero protection. Is it art or a functioning dining table?

I would not use any stain at all, you have such a unique wood I would really want to let is speak for itself color-wise.
