Id go with white subway with no mosaic detail. I just think with something so permanent like backspalsh to go safer/more classic. Bring in seaglass colors through light fixture and other accessories that can be changed out more easily in 5 or 6 years if you tire of the style or color.

This is the kitchen in one of our house remodel projects. The colors are grayish/neutral similar to the colors in your kitchen. The white subway tiles go nicely here and probably would in yours as well. Like the kitchen above your kitchen could use some elements that bring warmth into the space - wood especially. Since your kitchen is smallish you probably won't be able to introduce elements other than decorative ones. In which case, you might consider a backsplash with more pattern and color to really give the space some punch.
