Countertops!!!

Although my cabinetry will be consistently throughout our new construction, I really do not want to use the same granite/quartz/silestone throughout the house. Cabinets are knotty alder and I really love the look of lapidus for the kitchen. However, my master bath will be tiled with a porcelain tile that very closely mimics carrara marble and my other two guest baths will each have their own color/theme. My kitchen will just eek by with one slab of lapidus but what about the other bathrooms? Will remnants work? One granite quote I've received tells me that my master bath and shower seat will be larger than what they consider to be a remnant.

We are building in a rural area of Colorado and I'm used to dealing with Denver vendors. Any suggestions? I know fabrication is the cost on doing different stones. Or would it be more cost effective to go with a silestone or solid surface in the guest baths and stick to granite in the kitchen and master bath?
