Leaf miners, the larva of various flies. The adult flies lay eggs on the leaves surface which hatch into the larva that burrow into the leaves and make these trails.
Once in the leaves the larva are controllable only by squishing them, few insecticides will control them. Any control is aimed at the adults but spraying to control them can also kill off any predators of those flies which is counterproductive.

While they may be unsightly those tunnels seldom do any real harm.

dont know where OP is ... but sunflowers .. after they flower.. get pretty ugly .... and here in MI ... they are all blooming ...

what i meant .. was that it is getting on too late in the season.. to be worrying about some leaf damage ... this is not going to impact the seed harvest on any level ... so i dont know why you would worry about a remedy ...

If it's just a few leaves, I would cut them off and throw them in the trash can.
