These are the first figs that I have harvested from my fig tree that I planted from a cutting a year ago. It is a Celeste fig tree. My question is, why are the eyes of the fig starting to open? Are they over ripe? Also, the flavor was not a sweet as I was hoping, will that change once it is more established?

It is the hot and humid time of the year here in Florida, will that affect the flavor as well?
