Given that it is a traditional kitchen, I wouldn't go up to the ceiling. If you really want to carry it all the way up, choose a simple tile.

Stop the backsplach at the bottom of the cabinets. Make sure the wood trim around the window is in good condition or remove it and wrap the tile to the window. Leave the upper part of the wall drywall, no wood trim.

I would stop the tile at the bottom of the cabinets also.
