I'd at least look into modifying the existing cabinets. I would definitely deepen the cabinet above the fridge and build a fridge enclosure. Use the existing doors if you can; otherwise, add open shelving. If you can use the existing doors, then I would mount a new microwave with downdraft above the cooktop and add an open shelf for cookbook or display. Eliminate everything on the wall right of the door. This should give you room for an island. If you install open shelving above the fridge, then incorporate the microwave into the island. I wouldn't have open shelves above both microwave and fridge.
