    I just used up 4 1/2 pounds of tomatoes making a batch of salsa.

    I've read here that Juliet tomatoes are good for batting practice. ;)

    I'm up to 283 tomatoes (~ 115 lbs.) harvested so far off of 5 plants (4 Big Beef and 1 Black Krim) with at least a couple dozen more that should break color soon.

    I've used about 40 lbs. for canning Salsa so far with at least one more batch to go. The recipe I use (Annie's Salsa) takes about 12 lbs. per batch. I've also made a couple small batches of salsa for fresh eating. We eat BLTs at least once a week and usually slice one to eat with most dinners.

    I'll be making a batch of pickled green tomatoes with some that are left when I pull the plants this weekend or next. I've given away about 20 lbs. so far and the chickens have gotten their share...they get the less than perfect ones. I've got about 70 sitting in my ripening boxes at various stages of ripe at the moment.

    My freezers are completely full and the sauce from those frozen maters won't be made until the cold of winter arrives. So right now, I've been making lots of tomato soup. In fact I made the last batch (day before yesterday) too sweet, so today I'm going to make another and dilute the sweet one. I use every type of mater... cherries, paste, slicers... whatever is ripest goes into the soup.

    When my harvest is in full speed, I use fresh tomatoes every way that I can and with the surplus I oven roasted, later on I can use them in recipes, chopped in a soup or salad, as a substitute for tomato paste, with cooked vegetables and as an ingredient in a salad dressing.

    My most tasty way to eat them is in an avocado sandwich, with fresh tomatoes when I have them and oven dry tomatoes that I keep it in the freezer.

    Tomatoes and avocados from my garden with just sprinkle of red wine vinegar, olive oil, Maldon sea salt, Indonesia coarse ground white pepper.

    You are all invited, I have a lot of ripening avocados from the garden and roasted tomatoes in the freezer.:)

    If you are into canning or dehydrating or pickling then the uses are almost unlimited. Use discussions over on the Harvest forum include casseroles, all sorts of flavored sauces, grilled and roasted recipes, fermented recipes, ketchups, salsas, pickled tomatoes, tomato relishes, tomato jams and spreads, even tomato stuffings.

    I freeze a lot of my tomatoes. I always feel very good when I take out a couple of big chunks to use in whatever I'm cooking. The Juliet tomato is one of the best for sauce and salsa and also for freezing. You do have to let Juliet ripen thoroughly for it to have good flavor and that can take longer then some other varieties.

    Most of my tomatoes are Juliets. One harvest (every three days, 4 plants) gave me 260 juliet tomatoes. I've been dehydrating and powdering them. One batch came out more leathery so I keep them in the freezer and throw them in soups and such. I also have a freezer full of sauce, mostly Juliet and better boys for the sauce. Black Prince go in salads with other tomatoes because I don't really like them :P. Golden boys and better boys are the best in sandwiches. Sun Sugar and Juliet are the only ones I like fresh. Gonna have to grow some better tomatoes next year. I have one green zebra about to ripen, and a mystery Piriform tomato plant that hasn't given me any ripe tomatoes yet.

    My favorite ways to enjoy tomatoes are mostly in cooked form:

    == On the grill (Tomato Kabob )

    == On the pasta ( diced, saute'd )

    == Spaghetti sauce

    == Omelet (eggs, tomatoes, garlic, shallot , parsley )

    == in soups,

    == stuffed ( big ones )

    Sure I like them sliced on sandwiches , with cheese too. And if I have extras after giving away to relatives and friends, I can/jar some sauce for the coming winter.

    == Juice for Bloody Mary. hehe

    lol...I eat them with everything :-)

    Chicken with garlic and onions.

    Kids ate 2 rounds over spaghetti.
