I'd like to make some herb infused syrups but don't have the fridge space to store them indefinitely in the fridge, and I won't be using them up fast. So my question is, will they crystallize over time? If so, how long would that take? I re-read my old thread on that and the solution is to add some type of invert sugar, or the enzyme, but I don't have this enzyme so where do I get it or can I use all or part corn syrup? I'd rather do sugar syrup really, but if it is going to end up with the flavor and consistency of corn syrup, then I guess starting out with corn syrup won't make much difference. I would need to find organic corn syrup and that's not easy to find either. I don't want to add lemon juice because that's going to totally obscure the taste of the herbs I'm using.
