How should kitchen ceiling light be centered?

Last minute, I am second guessing our plan to have only recessed lights in the new kitchen + pendant over sink. What will change in this before pic is that the doorway to the office is moving over to the right to allow a straight run on the right side. The range will go over about where the doorway is now. (Frig will be on the right side cabinet run, essentially opposite the sink.) The light now is centered well with the sink. If I found something fun to replace it with, would it look odd from the ceiling perspective b/c the new aisle on the right side would make it look not centered from side to side? We'd still have recessed lights on either side and over the peninsula. (Peninsula is moving out about 36" - see drawing).

I would stick with your plan of recessed lights and a pendant over the sink. If you really wanted something additional, you could add a couple of pendants to your peninsula.

I hate single middle ceiling lights - had them for decades. They are glarey but don't give light where it is needed. Thirteen years ago, we put pot lights in our kitchen ceiling - 4 pots in the main part, and 1 near the sink. We also put in under cabinet lighting - the good kind - Xenon. Without changing cabinets, our kitchen looked updated! When I updated my kitchen this spring, they stayed and one more can light was added over an awkward, dark doorway. I'd give up a meal a day for a year before I'd ever go back to a ceiling light.
