I made your recipe! YUM!! It does not look as pretty as the pic from the recipe. I made the glaze with more juice than it called for and added zest. I used two lemons...the big one was enough for the bread...1/3 c! Thank you Alexander!

    Awesome Laura that looks great!! I also found my glaze didn't look like the pic that's why I added a couple tbsps of cream cheese to make it more thick and drizzly.

    For me that is the perfect cake, the acid cuts the sweetness so well. Even my hubby says that is his favorite I have ever made, I usually don't bake that much, I am more savory :).

    It also freezes very well in case you ever want to do that but with a family your size you probably need both.

    And I forgot to comment on the lemon, that thing is amazing, you don't need any ponderosas with Meyers that size! Wow!!

    Thanks Hobby! I will keep that recipe and make it again.....a real keeper! Since I typed my post, we are down to one loaf! Yes, my family can eat! I know, I don't get the size of those lemons. Perhaps John will comment. The Meyer lemons I've seen at the store are much smaller and more orange. This is definitely a Meyer. I also added a 1/2 limequat. I tasted the Meyer vs limequat...what a difference!! I may try making that same recipe with key limes someday....it would probably be great also. I then took the squeezed halves of one lemon and put it in my infusion pitcher. I saved the other (smaller and slightly dented) for another time...

    Laura, that loaf looks really good!! :) I can imagine your whole house smelled so good while it was baking...Hobby, that recipe you shared sounds amazing! Thank you for sharing it! :)

    I make zucchini bread with lime, or lemon juice and zest. I add a few spices to the batter. I use half white sugar + half brown. Sometimes just raw honey.. I grate the zucchini and let it sit until the juices form. I incorporate the grated zucchini plus the juice into the batter. It makes for a very moist loaf.. I love to use citrus glaze on the top of the loaves, and I use a skewer to poke holes down into the top inch of the fresh baked loaf, then drizzle the glaze (which includes some zest) all over the top which will seep down into the top of the bread. Yummy..

    Laura that looks delicious! Do you and/or Hobby mind sharing the recipe? Jinny, I don't know why I've never thought of adding lemon or lime to my zucchini bread...I cook and bake a lot, but I guess not very creative. Again, that's why I love this forum....always learning something new!!! I made zucchini bread last week and added chocolate to one loaf for my husband and daughter:) I would much prefer the lemon and lime tho

    Mary, it is under the thread "my first limequat". She posted a link. It is delicious! Next time, I will use even more juice for the glaze so that even more soaks through.

    That makes sense John based on my experience. How about the ones I've bought at the store though? They look nothing like mine and are not nearly as juicy!

    Laura and Hobby, sounds like a real winner. I don't cook but my wife and daughter do. Now I have to find some Meyer lemons and ask one of them to make it for me.

    I have seen Meyers for sale only once and even then only a few were on display. Does anyone know where they are sold in Massachusetts? (My Meyer is not producing yet.)

    Vladimir, do you have any other lemons or limes? I think that recipe would be good with any lemon or lime juice. I have only seen Meyers rarely in the store and they are about 1/4 the size and juice content of mine. Do you have a Whole Foods near you? Perhaps there....

    There is a WF 10 minutes away. Do you think it will work with limes?

    Absolutely. Frankly, it may even be better as I prefer a slightly tarter flavor. Key limes would be incredible to try in that recipe.

    They must be around even our big box grocery stores up here have them.

    Yes I had to use some lime juice in mine and it was great! Go for it!

    I thought I might cut a bit of the sugar next time too, I often do that with recipes. Especially because my squash was so sweet already!

    Vladimir, I always get Meyers from Trader Joes and I know there are a couple of them in Boston. They usually have them in the beginning of the summer. I haven't seen them lately:(

    Laura,

    The Meyers you buy at the store likely come from New Zealand; the quality is lower and they have been harvested for awhile, hence the lower juice quantity.
