Does anyone have an idea how you could get a similar look on stone walls? Plaster?

Yes I have done this to my stone walls in my house in France. I used what is called mortar adhesive which I believe is similar in consistency to plaster however it was specifically for stone work. I mixed the adhesive so that it was easy to paint on the stone with a big brush but not too thin and watery (there was lumps). It was quite easy actually and the finish is paint-able although I left it the off white color.

This second photo shows the "mortier adhesive" painted on the entire wall behind the bed.

Do you remember the name of the mortar adhesive you used? Was it an epoxy?

It is called mortier adhesif in France and there are a number of companies that make it. I believe they are companies located in France. Weber (a UK company?) makes the enduit (or mortar) to point the stones so they may make the adhesive as well. However, I don't know if you can get the product in the U.S. The product is in powder form. You add water to it until you get a consistency that allows you to use a paint brush.

I think epoxy is for wood, metal and plastic so it isn't good for stone work. You definitely need something similar but that bonds to stone.
