If they are in good shape I'd change the hinges to match your new hardware and paint them a semi gloss the same color as the wall.

I think they're kind of inoffensive. Depends on whether they're useful. For example, you might put in pull-out trays to really make pantry function fabulous. Or you could just keep occasional-use things like fancy linens and serving ware. Or if the family room is near here, it could be games and videos or whatever. Depending on what you do with the kitchen and with the floor here, it might work to just paint them to match the walls.

How deep is the inside of those cabinets? Maybe open it up, and turn that area into a coffee/wine station?

are you getting rid of upper cabinets above island? are you extending kitchen next to those pantry cabinets? I would incorporate them into the new kitchen, lots of potential!!!
