Depending on the size and health of plant, the seed pod will hold on through the winter. For me, they hold and open in the summer, releasing the seeds. But, I've lost some pods too, especially on smaller plants. I do water my plants just a little bit over winter.

It should be fine. Most lost pods in my experience occur when bringing into or out of the greenhouse.
