Problems with Lettuce

I'm having two problems with my lettuce, the first one is, I'm trying to figure our a pesticide or something to use on lettuce and other leaf crops, I'm getting caterpillars and other things that are calling my greenhouse home. I would prefer something natural, but at this point I'm not too picky. I would just prefer not to taste it. Any ideas would be appreciated, I just don't want to do other bugs. Too much work for something that going to just fly away later.

The second problem is my lettuce is Soft, lack of a better term, someone once said it was like butter. It just doesn't have much in the way of firmness. I'm not saying wilting, just...soft. I've tried different varieties of leaf lettuce, I'm getting high quality seed from Vermont Seed co, a nice seed mix, honestly it doesn't really matter what I use, the results are always the same. Really soft lettuce. Of course some people pay really good money for soft lettuce, but I'm looking for something with a little more body.

Just so you know the particulars.

The seed is Vermont Seed lettuce mix and it has a variety of about 6 different leaf types mixed together. I've tried other leaf lettuce varieties.

It's grown in a greenhouse, in a thin film channel.

I'm running Chem-Grow Hobby formula with no additional cal nitrate so that's 10-8-22. I've also tried using the same solution that's in my Tomatoes, which has to be somewhere in the area of 18-18-38 (jet fuel for plants), lastly I've also tried the Hobby formula really watered down to about 1/4 strength.

Still, I have the softest buttery lettuce you can imagine, with lots of caterpillars.

Any help would be appreciated.

Thanks
