Pumpkin Jam

For all who have an abundance of pumpkins there is a pumpkin jam recipe by a David Lebovitz on the Southern Exposure web page. I have no idea what it would taste like but thought it sounded interesting.

    That does sound interesting. I roasted and froze mine. And will probably run them through the dehydrator.

    It is interesting if someone wants to make it and eat it fresh with minimal storage--but canning pumpkin in anything other than chunks no longer is recommended by the NCHFP, so I wouldn't attempt to can it since there's no longer any safety-tested, safety-approved method for preserving pumpkin in any sort of pureed form.

    Yep. They've been anti-pumpkin puree canning for a long time now. I believe the reason has to do with the density of the pumpkin and their inability to determine a way to can a precise density at a precise temperature to guarantee safety since the density is so hard to determine and control based on the way water content of winter squashes/pumpkins fluctuates from one variety to another, and even from one fruit to another within a variety depending on growing conditions.

    I am roasting and dehydrating as fast as I can to get them preserved before they go bad. My freezers are full

    I just had that conversation about 5 minutes ago with my friend's husband who came and picked up a bin of Seminole pumpkin. I really don't see the need for canning anyway since it will keep on the shelf so long. Canning would be extra work. My friend makes pumpkin soup a lot and she wanted to prepare a lot at one time so it was ready to use and he asked me about canning. I suggested she cook and prepare the puree and freeze it in the size she wants to use for her soup, but otherwise just store the squash.

    I worked in my garden in a short sleeved shirt yesterday and last night we went to 24 degrees. How's that for Oklahoma weather? I pulled pepper plants and their cages, plus I managed to clear an area 4x16 between two cattle panels. I will put down cardboard, then cover it with 6-8 inches of leaves, then use the space to store my tomato cages for the winter and the panels will hold them. It helps me contain them in one place until I need them again in the spring plus they are out of my way as I clean the remainder of the garden. I have the cardboard and leaves waiting, but there will be no outside work today, but it has made it up to 40 degrees so far.

    That's a great idea to store cages. This year I may get my whole garden plowed so I have to get them out of the way.

    This was for a small batch pumpkin Jam that had to be made from Pie pumpkins and it was only for 1 1/2 cups for a small jar of refrigerator jam to last only a month. So there was no canning involved.

    Kim, Winter squashes can store for a very long time without freezing. I've had some of them last 18 months, and they weren't even in the house, They were in the unheated potting shed, which is not insulated, and also in the unheated garage, though it is well-insulated. I don't know how pumpkins/squash that are C. maxima or C. pepo store because the only pumpkins I grow are C. moschatas that all store for a long time.

    Carol, It is a discussion that never ends because a lot of people don't stay current on safety-approved food preservation practices.

    Oklahoma weather is crazy and last night's weather proved it. I'm not surprised how cold y'all were, and it went down as low as 9 degrees in the panhandle. I am a little surprised how cold we got way down here, but I blame it on being in the Red River Valley. Burneyville dropped to 26 and we dropped down to 30, which was a bit colder than the 33 forecast for Burneyville and the 32 forecast for us. We warmed up very, very quickly though and it already is 61 degrees here (our forecast high is 60).

    That sounds like a great plan for using the cages, cardboard and leaves. I could be out working in the garden today but the 2" of rain left it really muddy and I'm just so not in the mood to stomp around in mud. I hate to complain about getting rain because I am grateful it fell, but I'm not loving all the mud. With rain in the forecast for this weekend and for next week, the mud might be around a while.

    Now, for today's Giggle, the Snowflake Festival and Christmas Parade scheduled in Sherman for this Sat has been postponed to next Sat because of expected inclement weather here in the Texoma region on Saturday (cold rain). I am not sure why they expect next weekend to be any better than this weekend. It might be even colder, and could be wet or could be dry. It is terrible when inclement weather postpones the Snowflake Festival. At least it isn't being postponed because of snow, which would be so ironic.

    It sounds good. I also made pumpkin pudding with honey and cinnamon. My little man loved it who wouldn't right?

    Unfortunately I can't have any grains so no use for jam. I might see if my friend would like it.

    That is funny. You would think snow would add to the festivity.

    Last year I tried to store pumpkins in an old well insulated walkin meat locker and they all rotted in about 1 month. My camper is too small and my son will seriously disown me if I bring 1 more thing to his house.
