The back of the Gold Metal Flour package has a good recipe. It may have been updated since I wrote this one down, but I made it for years and it's delicious.

    White Bread

    Gold Medal Flour

    Dissolve:

    1-1/4 c. warm water (105-115°)

    2 envelopes dry yeast

    Stir in:

1 c. warm water or milk

    3 T sugar

    1 T. salt

    3 T. shortening

3-1/2 c. Better For Bread Flour

Beat until smooth. Mix in approx.:

    1-1/2 c.
flour (more or less flour will be needed depending on humidity)

to make dough easy to handle.

Turn dough only to lightly floured surface; knead until
smooth and elastic, about 10 minutes. Place in greased bowl; turn greased side
up. Cover; let rise in warm place until double, about 1 hr. (Dough is ready if
    indentation remains when touched.)

Punch down dough; divide into halves. Round up; place on
lightly floured surface. Cover with kitchen towels; let rest 15-20 minutes.
roll each half into rectangle, 18 x 9-inches. Fold into thirds. Roll dough into
rectangle 13 x 8-inches, pressing out as many air bubbles as possible. Roll up
tightly, beginning at the 8-inch end. Pinch edge of dough into roll to seal
well; press in ends of roll. Press each end with side of hand to seal; fold
ends under. Place loaves, seam sides down, in 2 greased loaf pans, 9 x
5-inches. Let rise until double, about 1 hour.

Bake at 425° on low rack so that tops of loaves are in
center of oven. Pans should not touch each other or sides of oven. Bake until
loaves are deep golden brown and sound hollow when tapped, about 25-30 minutes.
Immediately remove from pans. Cool on wire racks. Makes 2 loaves.

    Homemade Yeast Bread

    3 tsp Yeast
    Cup of warm water
    3 TBL sugar
    3 TBL oil
    1 1/2 tsp salt
    3 cups flour

Add yeast to warm water, and let it set for 6 minutes. Put flour, salt, sugar in mixer bowl, and stir. Add oil, and yeast mixture, turn on mixer for 3 minutes, then check how the dough looks, might need more flour or water, should feel like play dough. You should be able to pull the dough, if stick add flour, add flour or water a teaspoon at a time.Turn mixer back on for 7 more minutes to kneed.

Grease a bowl, put dough in it, cover with a towel. But a pot of boiling water in bottom of oven, close the door after dough is in it. Leave it for an hour to rise.

Put the dough into a greased bread loaf pan. No need to knead the bread, just shape the loaf, and cover it with the towel again. Put the dough with boiling water back in oven for 20 to 30 minute rise.

Put boiling water in bottom of oven, and cook the loaf 30 minutes at 350 degrees. Take out loaf of pan, check the bottom to see if done, will sound hollow if done. If not put back in oven for 5 minutes.
