Task lighting and ambient lighting are the two different types you need in a kitchen. Task lighting over the sink, over the counters and over the stove. Sometimes your exhaust hood can supply the task lighting for the cooktop area. For the sink and counters you should install the light so the it is in front of where you'll be standing. So you won't create a shadow over the surface. For counters with cabs above it'll be centered in the space on the ceiling corresponding to whatever counter isn't under the cabinets. So in your plan you need an extra recessed over the counter to the right of the frig. I'd also do one over the cooktop if the hood doesn't come out to the front edge of your stove and run all 3 on the same switch. You can likely get by with two in the rest of the kitchen for ambient light. 1600 lumen A19 120v screw-in led bulbs in all of them. Costco and HD have them among others.
