Any chance the door is sized such that you could turn it sideways and have it fit in the alloted space? If so, you could just build a cabinet box and reuse one door with a hinge to open upward.

Piggy backing on Kathryn P's response, that Amish cabinet make should be able to take that cabinet and just cut it down to the size you need.

I took out a metal hood and cabinet and replaced it with a wood hood. I bought it unfinished and was able to stain it to match my cabinets. Just a thought as a wood hood does not need to match the door style, though you do need to match the stain.

I'm guessing you could give the cabinet maker the cabinet and he'll be able to get it to work.

A hood insert ought to be able to fit in that cabinet, although it is too low as it is now. Call a cabinet shop.

Your Amish cabinetmaker shouldn't have too much trouble pulling that cabinet, cutting the doors and box to size, and reinstalling it. Matching the raised panel profile will be the most difficult part. I'd put that at the top and not be too fussy about a perfect profile/finish match.
