Can this be made without the top trim piece?

I'm wanting a clean look without the trim that is maybe 5" from the top. Also, can the cap be a lower profile (flatter) than shown? I can send pics to explain..... Finally, what wood species should I buy if I want to paint the newel white with a stained cap? Thanks!
