Daffies are mostly perennials. Where do you live? Some cultivars might be annuals but there is a perennial daffie for just about any part of USA

I'm a warmer zone than you but I have paperwhites in the ground and they come back every year. Just be sure you let them grow nicely (i.e. keep watering and fertilizing if needed) until the foliage fades. That gives the bulb what it needs for the next year.

Paperwhites don't need a chill as you rightly say. They, like all Narcissi, are perennial. There aren't any annual Narcissi. But some are treated as one season plants. Chilling Paperwhites won't make them come back. What they need to return is a warm dry summer and a mild, more or less frost free winter with some rain. In their native habitat they bloom in late autumn, winter or early spring. If you live in a Mediterranean climate they should grow outdoors for you and return each year.

Paperwhites bloom once a year regardless of being forced or planted in the garden.

The ones I have bloom in Nov. (Sunset zone 15, I think). They prefer to be on the dryish side when dormant (summer). Wet soil and warm temperatures can cause rot.
